摘要
为丰富苹果成分研究渠道,运用XPS(X-Ray photoelectron spectroscopy)对苹果不同部位C1S进行测定,结果表明:苹果表皮中C1S主要以C-C、C-H结合形式为主,其成分主要为脂肪和蜡;苹果果肉中C-OH结合形式明显增强,这种形式代表的是糖类、淀粉、纤维素及半纤维素和果胶,C=O、-C=O的增强,说明果肉中含有较多的有机酸;籽仁中C-OH结合形式有所下降,C-C、C-H结合形势有所增强,这种结构主要由蛋白质和脂肪酸提供。
In order to enrich research methods of apple component analysis, XPS was applied to measure C15 in different parts of apples in this paper. Experimental results showed that in apple pericarp C15 existed as the joint form of C-C and C-H predominantly and its leading components are fat and cere, in the apple sarcocarp the main joint form is C-C combined with C-H, however, the content of C-OH increases evidently. This indicated that there is saccharide, starch, cellulose, semicellulose and protein in apple sarcocarp. The contents of C=O and-C=O also increased obviously in the apple sarcocarp, which indicated that there are much organic acid in sarcocarp; But in seed the content of C-OH decreased, and the contents of C-C and C-H increased. This kind of structure is composed with protein and fatty acid.
