摘要 针对食品中反式脂肪酸,介绍了它的主要危害、存在与产生过程、分析检测方法、消减技术和立法状况,提出了今后的研究重点和方向。 With the trans - fatty acid in food as target, its main hazards, existing style, producing process, analyzing and inspecting methods are introduced, Its relative subtractive technology and law - making situation are also mentioned. The future research priority and direction are put forward as well.
