摘要
研究了具有营养保健功能的苦瓜番茄汁复合饮料研制工艺。试验结果表明,以鲜苦瓜和番茄为原料,经正交试验和感官评定优选制得的苦瓜与番茄复合汁饮料,兼得苦瓜和番茄的营养与风味。
Research and production of composed beverage from bitter and tomato with nutritional and healthy functions was studied. The results showed that taking bitter tomato as raw material to make the bitter juice and tomato juice,the composed beverage was obtained by orthodoxy design and organoleptic test,it had flavor and nutrition of bitter and tomato.
