产细菌素芽孢杆菌的筛选及发酵条件的研究 被引量:16

摘要 从发酵制品中筛选出10株能产生细菌素的芽孢杆菌,经鉴定C119、1398、N和L'为枯草芽孢杆菌;Y为地衣芽孢杆菌;D和L2为凝结芽孢杆菌。其中枯草芽孢杆菌C119产生的拮抗物质的抑菌活性最好,且抗菌谱广,对细菌、酵母菌、霉菌都有抑制作用。C119产细菌素的最适条件为:0.5%葡萄糖,1%蛋白胨,0.3%牛肉膏,培养基初始pH6.5、37℃振荡培养24h。 Ten Bacillus strains producing bacteriocin were isolated from fermented foods. After identification, it was confirmed that strain C119, 1398, N and L' belonged to Bacillus subtilis, strain Y was Bacillus lichenformis, and strains D and L2 were Bacillus coagulans. The baetefioein produed by Bacillus subtilis C119 had the highest inhibitory activity and widely inhibited bacteria, yeasts and molds. The optimal conditions for Bacillus subtilis C119 to produce bacteriocin were as follows: 0.5% glucose, 1% peptone, 0.3% beef extract, initial pH of medium as 6.5, cultivation at 37℃ for 24 h.
