玫瑰醋草缸盖晾晒前后和醋醅“发花”过程微生物消长规律的研究

Studies on the Growth and Decline Law of Microbial Flora in Strew Cover Before and After Sun Drying and That in Rosy Vinegar’s Culture Medium during the Stage of Fungus Growing

研究了浙江传统玫瑰醋生产用草缸盖晾晒前、后以及醋醅"发花"过程中微生物的变化情况。试验结果表明,晾晒前、后各种微生物的数量发生显著变化;晾晒工艺能显著改变草缸盖中微生物的分布,使草缸盖各部位微生物的绝对数量和各种微生物的比例趋于稳定。通过对"发花"阶段微生物消长情况的分析发现,"发花"前期以霉菌为主,中、后期以酵母菌和细菌为主。霉菌的最大含量可达1×106CFU/g,酵母和细菌的最大含量分别为1×107CFU/g和1×108CFU/g。表面和内部醋醅微生物数量差异大。在整个"发花"阶段,表面霉菌数多于内部霉菌数。细菌、酵母菌数量在"发花"前期,表面的多于内部的;在中、后期,内部的多于表面的。

The changes of composition and number of microorganism in strew cover before and after sun drying and that in vinegar＇s culture medium during the stage of fungus growing have been investigated in this study. The result showed that there was great differences in the number of microorganism in strew cover before and after sun drying. Sun drying could significantly change the composition of microorganism in strew cove, and could balance the number and ra- tio of microorganism in each part of the strew cover. The results of changes of microorganism in vinegar＇s culture medi- um suggested that there was given priority to molds at the early stage of the fungus growing process, while yeasts and bacteria became the primary microorganism in vinegar＇s culture medium in the middle and later stage. The maximum number of molds was up to 1×106^ CFU/g while yeasts and bacteria 1×10^7CFU/g and1×10^8 CFU/g respectively during the process of fungus growing. Great difference in microbial number between surface and interior of vinegar＇s culture medium was found. The number of molds in the surface of the culture medium was greater than that of interior during the whole process of fungus growing. Both yeasts and bacteria in surface were more than interior at the early stage of fungus growing, while it was just on the contrary in the middle and later stage.
