摘要 采用等离子发射光谱4L(ICP—AES)法对油炸食品进行铝元素分析测试,并进行风险评估研究。实验结果表明:零售摊位上的油炸食品中的油条的铝含量较高,多数在450mg/kg以上,最低的含量也在370mg/kg。炸薯条、炸薯片类的体闲食品,铝含量最高可达54.10mg/kg,最低的含量可达1.858mg/kg。油条中的铝含量超过国家标准约4~5倍,将产生铝摄入污染的风险,炸薯条、炸薯片类的体闲食品铝摄入污染风险相对较小。 Aluminum element in fried food was analyzed by inductively coupled plasina emission spectrometer technique (ICP-AES), and the risk was evaluated. The results showed that the concentrations of aluminum el- ement in fried strip from retail stall were over 450 mg/kg in majority, and the lowest concentrations were in 370 mg/kg. ,The highest aluminum content in fried potato chips is 54.10 mg/kg, the lowest one is 1.858 rag/ kg. The aluminum content in fried strip is 4 - 5 times higher than the state standard, it may cause the pollution risk of excessive intake of aluminum element which is relatively lower in fried potato chips.
