透射电子显微镜在淀粉及其衍生物中的应用 被引量:1

摘要 透射电子显微镜(TEM)常用于研究淀粉颗粒、淀粉糊和淀粉衍生物的结构,对于淀粉及其淀粉衍生物颗粒形态的分析具有重要作用。本文综述了TEM的样品制备方法和在淀粉及其淀粉衍生物中的应用情况。
