亚麻籽油精炼过程中脂肪酸和V_E的变化分析 被引量:26

摘要 分析了压榨亚麻籽油及其在精炼过程中脂肪酸和VE的变化。结果发现,亚麻籽油中含有7种不饱和脂肪酸和7种饱和脂肪酸,其中以α-亚麻酸含量最高(达50%以上)。经脱胶、脱酸、脱色及脱臭的亚麻籽油中脂肪酸组成和含量变化不大;而VE损失较大,总含量下降约48.59%。 The content and composition of fatty acids and tocopherol of flaxseed oil during the refining process were investigated. The results indicated that there were 7 kinds saturated fatty acids (SFA) and 7 kinds unsaturated fatty acids ( UFA), the content of a - linolenic acid was the highest to be above 50%. The content and composition of fatty acids were not significantly changed through degumming, neutralization,bleaching and deodorization,but the loss of tocopherol were great, the refining process caused a decrease in tocopherol content of approximately 48.59%.
