摘要 油脂的营养与健康是当今消费者普遍关注的问题之一,也是国际学术界有关领域的研究热点之一。天然油脂是甘油三酯的混合物并且含有其他少量成分。天然甘油三酯的营养与健康主要涉及到两个方面的问题:单个脂肪酸的营养与健康;不同脂肪酸平衡摄入比的营养与健康。前者有大量的研究数据和丰富的试验数据,可对消费者提供有价值的指导作用;后者有关脂肪摄入量和脂肪酸摄入平衡问题,推荐值不尽一致并且还受一些因素(如富裕程度、地方文化传统及饮食习惯等)的影响。 Nutrition and health of fatsand oils is one of the most concerned for current consumers, as well as the hottest points of research for the related field in academic circles. Natural fats and oils is a mixture of triglycerides and contains a few of other components. The nutrition anal health of natural triglycerides involves two aspects: nutrition and health of individual fatty acids, nutrition and health in terms of ω6/ω3 ratio. The former has a vast amount of research data and plentiful test materials, which could guide the consumers. The latter's recommendation value is not all the same and influenced by the level of prosperity poverty, local culture, tradition and eating habits.
