摘要
虾头富含蛋白质、脂肪、维生素等营养成分,虾头的综合利用一直受到人们的重视。筛选了正己烷为提取虾头油的溶剂,通过正交试验得出优化的溶剂法提取虾头油的工艺条件为:提取温度70℃、提取时间3h、料液比1∶7。利用气-质联用仪分析了虾头油的组成,虾头油中含有多种不饱和脂肪酸,不饱和脂肪酸含量较高。
Head of shrimp is rich in protein, oil and vitamins. The n - hexane was choosed to De extracuon solvent and the optimal technological parameter for extracting shrimp head oil was determined as follows: temperature 70℃ ,time 3 h and ratio of stuff to solvent 1:7. The fatty acid composition.in the shrimp head oil extracted by solvent was analyzed by gas chromatography -mass spectrometry. The results showed that there were many kinds of fatty acid , and unsaturated fatty content was higher.
