对苯并芘的理化性质、食品中苯并芘的污染来源、危害性及预防措施分别进行了详细的叙述。从食品的角度来看,苯并芘对人体具有非常明显和潜在的巨大危害。先对苯并芘的性质、污染来源及危害性有详细了解,后采取相应的有效防治措施,二者之间具有紧密的联系。
The physical and chemical properties of benzopyrene, benzopyrene food sources of pollution,dangers and preventive measures were described in detail. From the perspective of food, benzopyrene human right is very obvious and potentially enormous harm. Benzopyrene first right of the nature, source and the dangers of pollution have a thorough understanding, the latter take effective preventative measures, both have closely connected.
