目前,我国约有500家啤酒厂,大部分为国营企业,也有80余家为合资企业,占全国啤酒总产量的29％。据统计,年产量少于30,000吨的啤酒厂占全国啤酒厂数量的75％,总产量是全国的33％;而年产量达100,000吨的50家啤酒厂,其总产量则占全国总产量的40％。 自1979年中国实施开放政策以来,啤酒产量每年以23.9％的幅度增长。1995年,啤酒年产量为1,570万吨;今年首4个月,啤酒的产量共483.2万吨,增长率为11.2％。估计到2000年。

Beer production in China has been growing at an average annual rate of 23.9% since 1979. By the year 2000, the annual production of beer is estimated to be around 20 million tonnes. To maintain this development, the beer industry will need to take advantage of developing technologies. Here we introduce an advanced fermentation system involving storage cellar plants and their control systems.
