摘要
以苜蓿叶渣为原料制得的高活性苜蓿膳食纤维(HAFA),含有1070%水溶性纤维、1764%半纤维素、3622%纤维素与924%木质素,膨胀力与持水力分别为9ml/g和800%。详细论述了这种膳食纤维的制备方法、化学成分、物化性质及在焙烤食品中的应用,并推荐适宜的添加量。
Highly active dietary fibre additive,which was prepared from alfalfa leaf residue(HAFA), contained 10.70% soluble fibre, 17.64% hemicellulose, 36.22% cellulose and 9.24% lignin, and its expansive and water holding capacity were 9 ml/g and 800% respectively. The preparation procedure, chemistry composition, physiochemical property, and its application in baking food were discussed detailedly. Besides, the suitable tolerance for fibre enriched bread was given at last.
