摘要
采用自行设计的气流分级机对面粉进行分级,通过正交试验确定最佳工艺条件,并对分级后产品的性质进行分析,结果表明:面粉通过气流分级后,可提取高蛋白面粉和蛋白含量不同的多种产品,从而为利用国产小麦配制专用粉提供了一条经济可行的途径。
WT5”BZ〗The optimum technological condition for grading flour with the pneumatic grader designed by ourselves was determined through the orthogonal test.The characteristics of the finished products after grading were analysed.The results showed that the flour with high protein content and various products with different protein content can be produced after pneumatic grading,thus providing an economic and practical way for blending tailored flour with from the wheat produced in China.
