额尔齐斯河野生河鲈肌肉营养成分测定与评价 被引量:13

摘要 利用常规肌肉营养测试方法测定分析15尾额尔齐斯河野生河鲈(Perca fluviatilis)的肌肉营养成分,结果表明:河鲈肌肉(干重)中蛋白质为88.69%、脂肪为4.69%,灰分为6.62%。肌肉中含有18种氨基酸,总含量为75.89g/100g干重,其中8种为人体必需氨基酸,总含量38.15g/100g干重,占氨基酸总含量的50.30%;其必需氨基酸的构成比例基本符合食品法典委员会(FAO/WHO)的标准,河鲈鱼的限制性氨基酸为苏氨酸,氨基酸比值系数分为85.97,四种鲜味氨基酸总质量分数为29.40(干样)。脂肪酸中EPA与DHA质量分数分别为6.96%、1.39%。 Nutritional components of the muscle of wide Percafluviatilis were tested and analyzed with routine methods in order to evaluate its nutritive value. Samples of 15 wild individuals were collected from the Ereqsi River, Xinjiang. The results showed that the contents of protein, fat and ash of the fresh muscles were 88.69%, 4.69% and 6.62%, respectively. The composition of amino acids of muscle was found those to contain 18 common amino acids and 8 essential amino acids for human needs. In dry sample, the total content of amino acids was75.89%, the content of essential amino acids was 38.15 %, the percentage of essential amino acids in total amino acids was 50.30%. The constitutional rate of the essential amino acids in general accorded with the FAO/WHO standard. The threonine is restrictional amino acids and the coefficient of amino acids ratio was 85.97. In dry sample, the content of four delicious amino acids was 29.40 %. The contents of EPA and DHA in fatty acids were 6.96% and 1.39%.
