大果水晶梨与砀山酥梨采后生理及贮藏性比较 被引量:8

摘要 以大果水晶梨和砀山酥梨为试材,用保鲜纸包装,研究了(1±0.5)℃下大果水晶梨采后生理及贮藏特性。结果显示:与砀山酥梨相比,大果水晶梨在贮藏过程中果实呼吸强度和乙烯释放速率相对较高,贮藏结束时失重率比砀山酥梨高0.65%,硬度降幅达6.2%;大果水晶梨果实的可溶性固形物含量比砀山酥梨多损失9.71%,可滴定酸含量多损失15.69%,而Vc含量少损失3.53%;大果水晶梨果实的丙二醛含量和多酚氧化酶活性在整个贮藏期内明显高于砀山酥梨。实验表明,大果水晶梨贮藏期间的呼吸代谢比砀山酥梨旺盛,其消耗营养物质的速率也快于砀山酥梨,耐贮性明显不如砀山酥梨。 The postharvest physiology and storage characteristic of 'Suisho' pears which stored at temperatures about (1 ± 0. 5)℃ were studied. The results showed that the respiration intensity and ethylene release rate of 'Suisho' pears was higher,the weightlessness rate was increased by 0.65%,and the fruit firmness was decreased by 6.2% compared to 'Dangshan' pears. There was also great difference in the losing rate of nutrient ingredients. The losing rate of TSS and TA was raised by 9.71% and 15.69% ,respectively,but the Vc was reduced by 3.53% compared to 'Dangshan' pears. Furthermore,the MDA content and PPO activity of 'Suisho ' pears were also higher. Thus the conclusion was that the storability of 'Suisho' pears was less than that of 'Dangshan' pears.
