酒精碱法制备颗粒冷水可溶甘薯淀粉 被引量:2

摘要 采用酒精碱法制备颗粒冷水可溶甘薯淀粉,分析了乙醇和淀粉(干基)的比例、氢氧化钠溶液用量、水和淀粉(干基)的比例、反应温度和反应时间5个因素对冷水溶解度的影响,从而得出了单因素制备颗粒冷水可溶甘薯淀粉的最佳条件:乙醇和淀粉(干基)的比例为4.0∶1,氢氧化钠溶液用量为27.0 g,水和淀粉(干基)的比例为2.0∶1,反应温度35℃,反应时间15 min,此时的冷水溶解度为87.81%。 Granular cold-water-soluble sweet potato starch was prepared by alcoholic- alkaline treatment.The effects of the ratio between alcohol and starch (dry basis),the dosage of sodium hydroxide,the ratio between water and starch (dry basis),reaction temperature and reaction time on cold-water solubility of starch were analyzed.The maximum response at the optimal saponification conditions can be obtained. The cold-water solubility was 87.81%, when the ratio between alcohol and starch (dry basis)4.0:1, the dosage of sodium hydroxide 27.0 g,the ratio between water and starch(dry basis)2.0:1,reaction temperature 35℃, reaction time 15 min.
