摘要
主要介绍Kefir的历史概况、发展现状、发酵剂Kefir粒中的微生物以及Kefir的营养价值、食疗保健功能与Kefir产品的开发进展情况。
Kefir is a fermented milk drink that originated in the Caucasus region. This paper introduced the history and present situation of Kefir, especially micro-organisms in Kefir grains. Nutritional values, diet therapeutic and healthy function of Kefir were also reviewed. At last, we particularly summarized the current product development advances of Kefir.
