通过调控草料改善牛奶中脂肪酸成分 被引量:8

摘要 最近几十年以来,由于饲喂和管理方式、日粮中高精料和青贮以及放牧方式的改变,牛奶中脂肪含量呈下降趋势。牛奶中必需脂肪酸和共轭亚油酸的含量也呈下降趋势,随着越来越多的"低脂"奶制品的出现,人们对这些脂肪酸的消费显著下降。众所周知,反刍动物食品是人类补充共轭亚油酸的主要来源。通过对世界上不同地区、不同季节、不同饲喂方式下奶产品中脂肪酸以及草料、精料和牛奶中的脂肪酸含量进行检测表明,采食新鲜绿色草料尤其是放牧的牧草,其牛奶中不饱和脂肪酸和饱和脂肪酸的比例显著高于采食青贮饲料奶牛的牛奶,尤其是多不饱和脂肪酸和CLA(尤其是C18:2,cis-9,trans-11)含量更高。
