摘要 [目的]为葡萄皮色素的开发提供有价值的试验数据。[方法]以葡萄皮为原料,通过单因素试验及正交试验优化葡萄皮色素的提取工艺。[结果]乙醇浓度为50%~90%时,葡萄皮色素的提取效果呈上升趋势。提取温度50~80℃、料液比由14:增加到15:时,葡萄皮色素的吸光度增加明显。提取时间为2 h时,葡萄皮色素的吸光度值最大。各因素对葡萄皮色素提取效果的影响主次顺序为:提取溶剂浓度>料液比>提取温度,最优提取工艺为提取溶剂80%乙醇,料液比17:,提取温度80℃,提取时间2 h。[结论]该提取工艺以乙醇为提取溶剂,成本低廉,且操作简单,安全性高,适于工业化生产。 [Objective] The aim was to provide valuable experiment data for the development of grape peel pigment. [Method] With the grape peel as raw material, the extraction technology for pigment from grape peel was optimized through the single factor test and orthogonal test. [Results] The extraction effect on the grape peel pigment showed a rising trend when the ethanol concn, was 50%-90%. The absorbance of grape peel pigment was increased evidently when the extraction temperature was 50-80 ℃. and solid -liquid ratio was increased from 1:4 to 1:5. The absorbance value of grape peel pigment was the largest when the extraction time was 2 h. The influence of different factors for the extraction effect on grape peel pigment in order was: extraction solvent concn.〉 solid-liquid ratio 〉 extraction temperature. The best extraction technology was extracted solution of 80% ethanol, the solid-liquid ratio of 1:7, extracting temperature of 80℃ , and the extracting time of 2 h. [Conclusion] This extraction technology, taking the ethanol as the extraction solvent, had features of with low cost. easy operation and high safety, and was suitable for industrialized production.
