摘要
研究了产Nisin突变株WY-4的发酵条件,最适接种量为5%,最适发酵温度为30℃,最适起始pH值为6.75,采用流加1 mol/L的NaOH溶液来控制发酵过程中发酵液pH值不低于6,在此条件下,Nisin的效价达到718.98 IU/mL,比对照提高了29.14%.
The fermentation conditions of the mutant WY-4 which produces Nisin were optimized as follows: inoculating quantity (5%), temperature ( 30 ℃ ), and the original pH(6.75), pH of the ferment liquid being controlled at pH = 6 by adding 1 mol/L NaOH continuously during the fermentation. Under these conditions, Nisin activity increased remarkably, and its concentration reached 718.98 IU/mL, which was 29.14% higher than that of control.
