摘要
以沙棘汁、酸奶为主要原料,配以白砂糖、稳定剂等辅料,运用合理的加工工艺,通过正交试验和感官评定的方法,研制出了一种具有独特风味、多种营养素兼容的具有保健功能的新型饮料。研究结果显示该饮料的最佳配方为发酵酸牛奶30%,沙棘汁7%,稳定剂(CMC)0.4%,白砂糖8%,食用香精0.08%。
In this paper we use hippophae rhamnoides and yogurt as main materials with sugar and stabilizer and so on to research a kind of flavored and nourishing new drink. The optimum technological parameters were determined as follows: yogurt 30%, hippophae rhamnoides juice 7%, stabilizer 0.4%, white sugar 8%, essence 0.08%.
