摘要
综述了中国居民膳食钙的摄入水平,钙源的地域性;食品中钙含量及其生物利用率,钙生理功能及影响其在体内吸收的因素等;针对现状分析开发强化钙食品的途径及其进展。
The intake lever of calcium, the distribution of calcium source are reviewed; and the content of calcium in food and its bioavailability in body, the physiological function and the factors that affect its ingestion are analyzed; based on the present status the means of fortification in food are reviewed and progressed.
