摘要
本文综述了天然保鲜剂的保鲜机理及其在冷却肉保鲜中研究进展,分析了目前存在的问题,并对其发展前景和研究方向进行了展望。
The mechanism of natural preservative and its research progress on preservative for chilled meat were summarized in this article, analyzed the existing problem and also view its prospect and research orientation.
