摘要
江西吉安民间酿酒工艺保留着中国古代酿酒传统工艺的特征,挖掘与整理这些工艺、技术、文化,对丰富我国传统工艺科技史的研究内容和对现代酿酒工艺的借鉴与改进,都有较为重要的意义。
The folk liquor-making techniques in Ji＇an, Jiangxi Province still keep the characteristics of Chinese ancient liquor-making techniques. The exploration of such techniques could enrich Chinese traditional science and technology research and provide reference for the improvement of modem liquor-making techniques, which was of significant importance.
