摘要
葡萄与葡萄酒香气分析方法是提高和监控香气质量的基础。介绍了目前国内外主要用于葡萄与葡萄酒香气提取、分析和评价的方法,仔细分析了香气物质研究过程中存在的问题和难题,以期为葡萄与葡萄酒香气物质研究者提供参考。
Analytic methods of grape and grape wine aroma are the base for improving and monitoring aroma quality. The main methods concerning the extraction, the analysis and the evaluation of grape and grape wine aroma at present in China and abroad were introduced. The existed problems in the research on aroma substances were discussed, which could provide reference for grape & grape wine aroma researchers.
