摘要
制备了壳聚糖复合膜,并应用于黄瓜保鲜。在保鲜实验中,测定了黄瓜的失水率、叶绿素、维生素C、硬度等指标的变化。结果表明,使用涂膜保鲜后,12 d时黄瓜的失水率为7.5%、维生素C减少45.4 mg/kg、叶绿素减少5 mg/kg,黄瓜的硬度保持较好。利用壳聚糖复合膜的保鲜效果好于通常的保鲜膜保鲜效果。
Complex chitosan membrane was prepared and its application on the preservation of cucum- bers was studied. The results showed that after preservation with chitosan membrane for 12 days, the dehydrating rate was 7.5%, Vitamin C decreased in 45.4 mg/kg, chlorophyll decreased in 5 mg/kg, the hardness was well kept. The composite chitosan membrane showed better preservation results than that of normal film.
