摘要
本文综述了食源性微生物的危害,及控制措施,介绍了微生物危险性评估原理,目的及关注焦点。重点总结了我国微生物危险性评估(Microbiological Risk Assessments,MRA)应用的现状及最新研究成果,并对我国MRA的未来发展趋势提出了建议。
Hazards of foodborne microbe and their controlling measures were reviewed. Basic principle, goals and focus of microbiological risk assessments (MRA) were introduced. Application status and up progress of MRA in China were emphasized in this paper. Some suggestions were put forward to the future development of MRA in China.
