摘要 初榨橄榄油中的酚类化合物具有抗氧化、抗炎和抗凝的特性,食用橄榄油不仅有益于人体健康,而且还有预防和治疗多种疾病的作用,其微量组分在人体中具有生物活性并已显示出抗氧化和改善内皮细胞功能的效果。
