摘要
冻干技术是食品干燥技术领域中科技含量高、涉及面广的一门技术。为了在食品工业中推广该技术,本文阐述了冻干技术的原理、工艺操作、冻干食品的特点及冻干技术在食品工业中的应用。随着真空冷冻干燥技术的深入研究,该技术将成为今后一个时期食品工业的发展方向。
Freeze-dried technology is a high level and wide range technology in the field of drying food. For the technology being widelyused this paper describes the principle of the freeze-dried technology, the technical operation, the characteristics of freeze-dried food and the applications of freeze-dried technology in food industry. With this technology well studied, it will be a future research focus of food industry.
