沈阳市幼儿园儿童膳食营养状况调查

Investigation of Dietary Nutrition Situaion of the Kingdergarten in Shenyang City

目的:了解沈阳市不同地区及类别幼儿园儿童膳食营养状况。方法:抽取8所幼儿园带量食谱进行电脑配餐计算。结果:沈阳市幼儿园膳食中各种营养素,城市示范和一类园的摄入量均高于其他6所幼儿园;8所幼儿园蛋白质、脂肪、碳水化合物三大产热物的构成比例基本合理;示范和一类园动豆蛋白质达到50%以上;维生素A及钙的摄入严重不足。亚临床维生素A缺乏患病率农村高于城市;贫血患病率示范园农村高于城市;营养不良患病率8所幼儿园之间无显著性差异。结论:农村和二类以下幼儿园的儿童营养膳食质量问题突出。加强对农村和二类以下幼儿园儿童营养监督是我们今后工作的重点。

Objective： To know the children＇s eating, drinking and nutrition situation in the classification kindergartens of different areas in Shenyang. Methods： The food ration was investigated by sampling the cookbooks from 8 kindergartens. Results： In Shenyang, the intake amount of various kinds of children＇s nutrition meals in the city demonstrated kindergarten and the first-class kinder- garten was higher than that in the other 6 kindergartens. The ratio of protein, fat, hydrocarbon from the children＇s nutrition was funda- mentally rational. The intake amount of animal and vegetable protein in the city demonstrated kindergarten and the first-class kinder- garten reached over 50%. The intake amount of vitamin-A and calcium was not seriously sufficient. The ill rate of the inferior clinical vitamin-A deficiency in countryside was higher than that in city. The ill rate of anemia in the demonstrated kindergarten in countryside was higher than that in city. The ill rate of malnutrition was no notable difference among the 8 kindergartens. Conclusion： The quality problems of children＇s nutrition meals in the second-class kindergartens and in the countryside kindergartens are outstanding. Reinforce and supervise to the children＇s nutrition of the second-class, under second-class kindergartens and the countryside kindergartens is our working focal point in future.
