摘要
为了给广大兽医卫生检验人员提供便捷有效的病、死畜禽肉检验技术与方法,本文系统地介绍了检验病、死畜禽肉的几种技术方法,包括感官检验、细菌学检验、放血程度检验、pH值测定、硫酸铜肉汤反应以及过氧化酶反应。并对这些方法的注意事项作了一定的介绍,最后对病、死肉的处理提出了自己的建议。
In order to provide the convenient and effective test methods to dead or sick animal meat for veterinary sanitation test personnel, the article introduced systematically several techniques for testing dead or sick animal meat, including sense test, bacteriological test, bloodletting degree test, pH value test, CuSO4 broth reaction test and peroxides test etc. At the same time, the notable items for these methods were also introduced. Finally, the author gave some own suggestions for dealing with dead or sick animal meat.
