摘要
本文利用苦荞种子培育出的新鲜芽苗,打浆后对其进行特殊包埋处理,结果表明:利用此浆和面,可制得美味爽口的绿色新型保健挂面。其最佳配方为面粉100%、苦荞汁20%、海藻酸钠0.2%、Na2CO30.2%~0.3%、食盐2%。
The study on using fresh sprouts that the tartary buckwheat seeds growed, as to it's carried on the special pack to cover up the processing after making juice, It has been tested that the optimum proportion is to add 20 % tartary buckwheat juice,0.2 % sodium algnate , 0.2 %-0.3 % Na2CO3 and 2 % salt to flour, It could make up of delicious and healthy Fine dried noodles.
