摘要
介绍了国内外研究较多的三类脂肪代用品,概述了脂肪替代品在乳制品中的应用现状,指出了我国脂肪代用品发展存在的问题与研究前景。
Three kinds of fat substitutes which be researched in depth was introduced, the application status of fat subsitutes in yogurt, cheese, ice cream and dairy industry summaried, and the problems and directions for fat substitutes research in future noted.
