摘要 蕈菌核糖核酸酶蛋白和肽是蕈菌中一类重要的功能性成分,其研究结果有助于人们进一步了解蕈菌的生物学功能。文中综述了不同种蕈菌核糖核酸酶蛋白和肽的分离、纯化学方面研究进展,并讨论了它们的生理生化性质、活性、对底物的特异性、作用机制及应用前景等。 Ribonucleases proteins and peptides are a kind of important functional component in mushrooms. Results of researches on it have key effects on understanding biological functions of mushrooms. Advances in the study on Ribonucleases proteins and peptides of mushrooms were reviewed. The methods of isolation and purification from different kinds of mushrooms were described. The characteristic of biophysico-biochemistry, mechanism of action and potential use of Ribonucleases protein or peptides were introduced.
