湘黄鸡在不同饲养条件下肉质性状及经济效益的研究 被引量:5

摘要 为了比较湘黄鸡在放养与舍养两种不同的饲养方式下的肉质性状和经济效益,将初出壳的健康湘黄鸡雏鸡母苗1 000羽,经一个月室内地面垫料平养育雏后,选取980羽,分成放养和舍养,每组各490羽进行饲养对比试验,结果表明:放养组鸡群生长健康、毛色整齐、光泽度好、结实紧凑,而舍养组不如放养组;测定肌肉中四种鲜味氨基酸(谷氨酸、甘氨酸、苏氨酸、丙氨酸)的总含量,放养鸡(90.76 mg/g)比舍养鸡(83.08 mg/g)高7.68 mg/g,肉色和嫩度差异显著(P<0.05),而大理石纹、失水率和pH值差异均不显著(P>0.05),肌间脂肪舍养鸡略高于放养0.01%;经济效益方面,放养组比舍养组每羽多盈利2.36元。 In order to compare the meat quality traits and efficiency under restocking and homing of Hunan Yellow Chicken , 980 chickens from 1 000 early out shell healthy Hunan Yellow Chicken after 1-month seeding indoors bedding-raising brood, were chosen and divided into the restocking group and the homing group, each group had 490 birds. The results showed that: the restocking group was better than the homing group in healthy, the coat color and tidy gloss and the solid. The total content of four delicious amino acids of muscle (Glutamic acid, Glycine, Threonine, Alanine) for restocking chicken (90. 76 mg/g) was 7. 68 mg/g higher than that for homing chicken (83.08 mg/g), meat color and tenderness were significantly difference (P〈0.05), while marble stripes, water loss rate and pH were no significant difference (P〉0.05), intramuscular fat for homing chicken was 0.01% higher than that for the restocking, and economic benefits, per feather of restocking group was 2. 36 Yuan more than that of the homing chicken group.
