The konjac glucomannan is a high-molecular weight, water-soluble and non-ionic polysaccharide.It is widely used in many fields, fu this article the recent advancement in the research on the chemical structure, physical-chemical characteristics, physical modification, chemical nlodification, and compound modification of konjac glucomannan were generalized. The existing problems were pointed out and the exploitation direction of KGM in the future was expected.
