投饲蚕豆对草鱼生长和肉质影响的初步研究 被引量:32

摘要 分别以配合饲料(对照组)、蚕豆(蚕豆组)饲喂平均体重为496.5 g的草鱼(Ctenopharyngodon idella)66d,考察蚕豆对草鱼生长和肉质的影响。结果表明:配合饲料组和蚕豆组增重率为82.76%,36.96%;饵料系数为2.17,4.45;肥满度为13.09,7.72;粗脂肪含量为0.89%,1.43%;肌肉失水率为27.14%,15.87%;肌原纤维长度为28.32μm,33.31μm;羟脯氨酸0.12mg/g,0.16mg/g。在生长方面,与配合饲料组相比,蚕豆组草鱼的增重率、肥满度极显著降低,饲料系数极显著增加(P<0.01);在肌肉品质方面,失水率极显著降低;粗脂肪含量、肌原纤维长度、羟脯氨酸含量极显著提高(P<0.01)。结果表明,投喂蚕豆对草鱼肌肉具有特殊的改变作用。 A study was conducted to investigate the effect of feeding broad bean on growth and meat quality of grass carp. Grass carps with average body weight of 496.5 g were fed with practical complete diet and broad bean for 66 days, respectively. The feeding trial showed that the growth rate of grass carp fed with practical complete diet and broad bean were 82. 76% and 32. 96% , feed conversion ratios were 2. 17 and 4. 45, condition factor were 13.09 and 7.72. The analysis of meat quality showed that the muscle's lipid content were 0. 89%, 1.43%, moisture-loss ratios were 27. 14%, 15.87% ; length of myofibril were 28. 32μm, 33.31 μm; hydroxyproline content were 0. 12 mg/g, 0. 16 mg/g for grass carp fed with practical complete diet and broad bean. Among these indexes, the growth rate, condition factor and waterloss ratio were significantly decreased by feeding broad bean(P 〈 0. 01 ), but the muscle' s lipid content, length of myofibril, hydroxyproline content and feed conversion ratios were increased (P 〈 0. 01). Results above showed that there was a special effect of feeding broad bean on meat quality of grass carp.
