红鲫实验动物与本地鲫营养成分的比较 被引量:2

摘要 目的测定红鲫实验动物、本地鲫的含肉率及肌肉营养成分,为红鲫饲料科学配制提供参考依据。方法选用24尾1龄红鲫幼鱼2、1尾1龄本地鲫幼鱼,按常规方法测定,并计算其能量和E/P值(能量蛋白比)。结果红鲫、本地鲫的含肉率为46.34%、55.83%;红鲫、本地鲫肌肉(鲜样)中分别含水分79.11%、81.41%,粗蛋白质12.47%、14.38%,粗脂肪6.95%、1.88%,粗灰分1.01%、1.32%,无氮浸出物0.47%、1.01%,能量5.65 kJ/g、4.32 kJ/g,E/P值(能量蛋白比)为45.32 kJ/g3、0.03 kJ/g。结论红鲫实验动物与本地鲫含肉率及肌肉营养成分有一定差异。 Objective To determine the rate of flesh content and nutritional composition in the muscle of red crucian carp as laboratory animal and local crucian carp and provide a reference for scientific ration of red crucian carp feeds. Methods Twenty four young red crucian carp and twenty one local crucian carp of one year old were colleted and determined by general methods. The contents of energy and those of E/P ( energy to protein) were calculated. Results The rate of flesh contents of red crucian carp and local crucian carp were 46.34 %, 55. 83 % respectively. Those contents of moisture, crude protein, crude fat, crude ash, nitrogen - free emersion, energy, E/P (energy to protein) in the fresh muscle were 79.11%, 12.47 %, 6.95 %, 1.01%, 0.47 %, 5.65 kJ/g, 45.32 kJ/g and 81.41% ,14.38% , l .88% , 1.32%, 1.01%, 4.32kJ/g, 30.03 kJ/grespectively. Conclusion The flesh content and nutritional component in the reusable have some differences in red crucian carp and local cnacian carp.
