摘要 应用超高压技术,对旋毛虫肌幼虫进行杀灭作用研究。结果表明,压力为50MPa,处理10min、20min均不能杀灭虫体;100MPa,处理10min,能杀灭部分虫体;100MPa,处理20min或200MPa,处理10min时,能杀死全部虫体。本研究为食生肉和肉食品加工提供了安全可靠的新途径。 The parasiticidal effects of superhigh pressure were studied for Trichinella Spiralis larvae.Treated for 10min or 20min at the 50MPa pressure,the worms were not destroyed.Treated for 10min at the 100MPa pressure,they were partially killed.Treated for 20min at the100MPa pressure or for 10min at the 200MPa pressure,they were all killed.The results supply a safe and dependable path to eat fresh meat and make meat product.
