超高压对旋毛虫肌幼虫杀灭作用研究

Study on Parasiticidal Effects of Superhigh Pressure for Trichinella Spiralis Larvae

应用超高压技术，对旋毛虫肌幼虫进行杀灭作用研究。结果表明，压力为５０ＭＰａ，处理１０ｍｉｎ、２０ｍｉｎ均不能杀灭虫体；１００ＭＰａ，处理１０ｍｉｎ，能杀灭部分虫体；１００ＭＰａ，处理２０ｍｉｎ或２００ＭＰａ，处理１０ｍｉｎ时，能杀死全部虫体。本研究为食生肉和肉食品加工提供了安全可靠的新途径。

The parasiticidal effects of superhigh pressure were studied for Trichinella Spiralis larvae.Treated for 10min or 20min at the 50MPa pressure,the worms were not destroyed.Treated for 10min at the 100MPa pressure,they were partially killed.Treated for 20min at the100MPa pressure or for 10min at the 200MPa pressure,they were all killed.The results supply a safe and dependable path to eat fresh meat and make meat product.
