葛根醒酒保肝饮料的开发研究 被引量:10

摘要 以葛根、葛花、枳椇子、扯根菜等中草药为主要原料,开发研制醒酒保肝饮料。采用正交试验,对中草药配方和饮料配方进行了筛选。结果表明,最优中草药配方为:葛根16 g、葛花8 g、枳椇子12 g、扯根菜6 g、山楂4 g、甘草2 g;最优饮料配方为:中草药提取液100 mL/L、蔗糖浓度60 g/L、柠檬酸浓度1 g/L、蜂蜜用量4 g/L。 Radix puerariae, flowers of Pueraria lobata, Hovenia duleis Thunb, Penthorum chinense Pursh were used as main raw materials to develop radix puerariae beverage with sober-up and liver-protection functions. Orthogonal test was adopted to screen the formula of Chinese herbs and the formula for the beverage. The results showed that the optimum formula of Chinese herbs was as follows: Radix puerariae 16 g, flowers ofPueraria lobata 8 g, Hovenia duleis thunb 12 g, Penthorum chinense pursh 6 g, hawthorn 4 g, liquorice 2 g; and the optimum formula for the beverage was as follows: Chinese herbs extract 10 %, sucrose concentration 6 %, citric acid concentration 0.1%, and honey 0.4 %.
