摘要
吴山酥油饼是杭州名点,历史悠久,外形美观,制作精细,传统的制作方法在制作过程中容易出现失误,并且制品不够精致。经过不断的研究,在配方、制作过程、成型及成熟等方面进行创新,产品的精致度有很大的提高,成功率高且比较稳定,产品造型更为美观,制作简便易行,对教学实习和实际制作都大有裨益。
Wushan Crisp Cakes, a famous dim sum in Hangzhou, has a long history and high reputation for its elegant shape and exquisite craftsmanship. However, its traditional producing technology leaves much room for improvement in the misoperation. Constant researches on the formulating of the recipe, producing process, shaping, etc. ensure a series of innovations in the refinement and precision of the products, the stable yield ration and the simple operation, which are beneficial in its teaching and its producing practices
