高压处理对橡实淀粉黏度特性影响的研究 被引量:11

摘要 利用Brookfield DV-Ⅱ+黏度计测定锥栗、栓皮栎、小红栲、茅栗4中橡实淀粉的黏度特性,研究了高压处理对橡实淀粉黏度特性的影响规律。结果表明,高压处理对不同的橡实淀粉黏度影响的效果不同;高压处理的含水量对黏度特性有一般显著影响,高压处理的含水量越高,影响效果越大;高压处理的压力大小对黏度特性有极显著影响,影响效果呈倒马鞍形,150~350 MPa压力区间是影响效果较小;高压处理的保压时间长短对黏度特性有极显著影响,影响效果呈"V"字形,保压时间10 min影响效果最小。 The influence rule of high - pressure treatment on the viscosity of acom starches were studied by applying Brookfild DV - Ⅱ + viscosity instnnnent and using the acom starches of Castanea henryi, Quercus variabilis, Castanopsis carlesii, and Castanea seguinii as materials. Results: High - pressure treatment exhibits different effectiveness on the viscosity of different acorn starch. The moisture during the treatment significantly influences the high - pressure effectiveness; the higher the moisture, the stronger the effectiveness. The pressure level of the high - pressure treatment has extra significant effectiveness on the starch viscosity, showing a effectiveness curve of reversal saddle shape, the pressure range of 150 - 350 Mpa has weaker effectiveness. The sustaining time of the high - pressure treatment has extra significant effectiveness on the viscosity, showing a "V" shape effectiveness curve, the sustaining time of 10min exhibits the weakest effectiveness.
