储存玉米膜脂损伤指标的研究 被引量:8

摘要 对同一区域不同储存年限玉米样品的脂肪酸值、过氧化氢酶(CAT)活力、过氧化物酶(POD)活力、电导率、水溶性酸值五个指标进行了测定,并使用SPSS统计软件对数据作了差异显著性分析,相关性分析。结果表明:不同储存年限玉米的脂肪酸值、CAT活力、POD活力、电导率的数据各自有显著性差异。脂肪酸值与储存时间呈高度显著相关性,过氧化物酶活力、电导率分别与储存时间呈显著相关性;脂肪酸值、过氧化物酶活力分别和电导率呈显著正相关和显著负相关,过氧化物酶活力与脂肪酸值、过氧化氢酶活力分别呈显著性负相关和显著性正相关。 The activities of catalase (CAT) and peroxidase (POD), electrical conductivity, water- soluble acid value and fatty acid value of maize stored for different years in a same zone were measured. Data were analyzed for difference significance and correlation by SPSS. Results show that data of the activities of CAT and POD, electrical conductivity, water - soluble acid value of the maize are significantly different with storage time. Fatty acid value has highly significant correlation with storage time; activity of POD and electrical conductivity have significant correlation with storage time; fatty acid value and activity of POD has significant positive correlation and significant negative correlation respectively with electrical conductivity; activity of POD has significant negative correlation and significant positive correlation respectively with fatty acid value and activity of CAT.
