摘要
溴酸钾是我国近期规定禁用的一种面粉添加剂。主要对国内外面粉及其制品中溴酸钾的检测方法进行了介绍和比较,并提出了我国目前应选用的方法。
Potassium bromate is a kind of flour improver which has prohibited in China recently. This article compares the detection methods of potassium bromate in wheat flour and its products and puts forward the method that our country should choose at present.
