Sodium diacetate（SDA） is a kind of new multi - function and green food additive which mainly used as the antiseptic in grain, food and feed, anti-fungus agent, antistaling agent, seasoning, pH regulator, quality improver, conserving agent for meat products, and is also main component for a compound anti-fungus agent. The method to qualitatively and quantitatively analyze the content of sodium diacetate in food is discussed by High Performance Liquid Chronratography.
