摘要
效率是经济学研究的核心问题之一,也是饭店业在经营管理中追求的目标。针对饭店效率的内涵、影响因素、测量方法等几个方面进行理论研究和文献梳理。结果表明:大部分学者从经济层面上提出了饭店效率的内涵,即从投入产出比例上研究饭店效率;饭店效率的理论研究则基于产权、竞争和管理3个基本理论;饭店效率测评方法经历从传统的单因素测评到现在多因素测评——前沿分析法的发展,尤其是数据包罗分析法越来越多地应用于国内外饭店效率研究中。最后指出加强对饭店效率的应用研究将是我国饭店研究的方向。
Efficiency is one of the core problems that the economics deals with. It is also the goal that our hotels chase in their business administration. Based on the review of foreign and native documents of hotel efficiency,this paper studies hotel efficiency,influencing factors,methods of measurement and so on . It finds that the most scholars define the hotel efficiency from the economical meaning, namely, input -- output proportion; the theoretical study based on the property right, competition, and management ;the methods of measurement has developed from the traditional sole--factor to the frontier approach,and DEA is used more and more in the reseaches. At last,this paper proposes that we should study the hotel efficiency from the theoretics and practice.
