单环刺螠(Urechis unicinctus)废弃内脏营养成分分析

Analysis of Nutritional Components in Discarded Internal Organs of Urechis unicinctus

对烟台市售单环刺螠废弃内脏进行了营养成分分析,结果表明:单环刺螠新鲜废弃内脏蛋白质含量为18.25%,脂肪含量为0.12%,总糖含量为4.09%,灰分为14.30%,Ca为2.10%,Mg为0.41%,Fe为0.32%,Zn为0.03%;对单环刺螠废弃内脏的脂肪酸分析发现,EPA、DHA和DPA均较为丰富,分别占总脂肪酸的21.61%、3.67%和56.24%.单环刺螠废弃内脏具有很好的开发利用价值.

Analysis of nutritional components in discarded internal organs of Urechis unicinctus sold in Yantai markets shows that the content of protein, fat, total sugar and ash is 18.25% ,0.12% ,4.09% and 14.3%, respectively. The content of calcium, magnesium, ferrum and zincum is 2.10% ,0.41% ,0.32% and 0.03%, respectively. Analysis of fatty acid in discarded internal organs of Urechis unicirtctus shows that EPA ,DHA and DPA are fairly rich and respectively account for 21.61%, 3.67% and 56.24% in total fatty acids. The discarded internal organs of Urechis unicinctus posses excellent development potential.
