丙烯酰胺与谷胱甘肽体外试验研究 被引量:2

Modeling Investigation of Acrylamide Reacting with Glutathione in Vitro

摘要 为研究丙烯酰胺与谷胱甘肽的反应速率与丙烯酰胺毒性的关系,采用RP-HPLC检测不同反应时间、浓度等条件下反应液中的巯基浓度,建立反应速率模型。结果表明,谷胱甘肽中的巯基在70min内基本反应完全;增加丙烯酰胺浓度,可以加快巯基的反应速率。该模型对评价丙烯酰胺在膳食中的暴露量及对机体的毒害作用具有较好的参考价值。 The toxicity of acrylamide was correlation with the reaction grade between acrylamide and glutathione, The reaction process was studied by using RP-HPLC to detect the concentrations of sulphydryl in reaction system. Factors that could influence the reaction were discussed in detail and rate equation of the reaction was established. The results indicated that the reaction of acrylamide with glutathione was additional reaction and second-order reaction. It would be valuable for using the obtained rate equation to evaluate the toxicity of acrylamide exist in the food stuff.
