摘要
通过单因子分析法对玉米醇溶蛋白（Ｚｅｉｎ）的提取参数作了比较研究。确定了相关参数为：脱脂样品原料用６０％乙醇在６０℃提取两次，每次３０分钟，然后３％盐溶液沉淀后冷冻干燥。
The author studied the preparation of zein from gluten meal and established the extract condition as follow: gluten meal was extracted twice with 60% alcohol at 60℃ ,supernatant was dropped into twice the volume of cool water solution which contains 3% NaCl. Residue was washed and freeze dried.
